A slight twist on the classic Clover Club cocktail. Invented in the early 1900s and included in The Ideal Bartender by Thomas Bullock in 1917, we got hold of it and took a spin on a classic. So easy. So good. Try it…
1.) Place half the egg white and half the lemon juice and all the other ingredients in a shaker with ice. Shake it!
2.) Strain into a glass.
3.) Do a second round of shaking. Place the other half of the egg white and lemon juice in the shaker with ice and shake again.
4.) Top up your cocktail with a second layer of foam. By now the first layer of the cocktail would have split, and the beautiful red-pink colour will appear in the glass.
5.) Garnish with a lemon slice, thyme and raspberry on a toothpick.
Side note, you can make this drink without the Vermouth, but it really does add a beautiful layer to the finished drink!
