INGREDIENTS

60ml New Harbour Distillery Rooibos Gin infused with Orange Fizzer*

15ml Extra Dry Vermouth

30ml Fresh Orange Juice

Dash of New Harbour Distillery Sweet Orange Bitters

Charge of Ginger Ale


For Peach Schnapps Foam:

1/2 Aquafaba / Egg White

15ml African Spirit Lab Peach Schnapps 

15ml Lemon Juice

Dash of Saline*

Apricot sweet or popsicle

METHOD

We're not talking about Spiderman's archenemy, but rather a sweet and tangy fizzy drink with an explosion of apricot flavours. This heritage-inspired cocktail will take you on a South African adventure worthy of legend!

Jesse Chinn takes you through the steps:

⚛︎ In a cocktail shaker filled with ice, combine the first half of the ingredients, shake to combine & strain into a rocks glass. 

⚛︎ In a separate shaker, combine all the ingredients for the Peach Schnapps foam. Dry shake to emulsify. 

⚛︎ Add ice & shake to chill.

⚛︎ Top glass with ice & charge with ginger ale.

⚛︎ Gently pour the foam to form a layer.

⚛︎ Garnish with an apricot sweet or popsicle & serve.

*How to infuse Rooibos Gin: Add Orange Fizzers to Rooibos Gin. Set it aside in a sealed glass jar for 24 to 48 hours until fully dissolved. Give it a shake before use.

**Make a saline solution: Mix 20 g of salt with 80 ml of water. Shake until it's clear and keep in a dropper dispenser.
